It's been a while
So it's been a while since I wrote to everyone out there as I have been a very busy bee. But I am back and hoping to give the page a new look in the next few weeks, as well as some more new content and lots of new recipes I've tried out.

This week in the metro was an article on the blogger deliciously ella, and how she's launched her recipe book this week. So from that I got my inspiration to make the sweet potatoe brownies, using her famous recipe (click here for recipe. They were really easy to make and very tasty too, also very healthy as far as brownies go anyway!

HEALTHY COOKIES
Yep that's right as healthy as they can get cookies. Using simple ingredients, from the cupboard and great for kicking the sweet tooth craving. Thanks to www.texanerin.com for this great Recipe!

Ingredients
- 1¼ cups canned chickpeas, well-rinsed and patted dry with a paper towel
- 2 teaspoons vanilla extract
- ½ cup + 2 tablespoons (165 grams) Peanut butter, natural is the best - room temperature
- ¼ cup (80 grams)
- 1 teaspoon baking powder
- ½ cup (90 grams) chocolate chips
METHOD
- Preheat your oven to 350°F / 175°C. Mix all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they're combined.
- Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.
- With wet hands, form into 1½" balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising.
- Bake in the oven for about 10 minutes. The dough balls will still be very soft when you take them out of the oven. They will not set like normal cookies.
- Store in an airtight container at room temperature (or in the fridge) for up to 1 week.
ADDED EXTRAS
- My can of chickpeas was 400 grams, 240 grams without the water, and I used all of them.
- Don't use regular peanut butter as the cookies will come out oily You MUST use natural peanut butter

OUT AND ABOUT
Following from my last post where myself and Josh created our date jar this weekend we pulled out 2 sticks from our jar. One being to find Platform 9&3/4 at Kings Cross Station in London and the other being to feed the birds at St. James' Park near Buckingham Palace.
It was an absolutely brilliant day out and a great way to explore.
When we got to Kings Cross Station we headed for platform 9 to try and find platform 9&3/4 as you arrive before the barriers it's very clear where the Harry Potter platform is... with someone dressed as the guard master from the film, fully equipped with wands and scarves from whatever house you want to be in and a professional photographer - they don't mind you taking your own photo's though, as you can see from ours. It's a great way to release the inner child!
We then got the tube down to Green Park and walked to St. James' Park. It's a lovely walk and not far at all! We already had some bread that had gone stale to feed them in our bag. I have never seen so many birds after food. There are many types but you can't feed the pelicans. The squirrels like to be fed nuts too, they crawl up you and take it straight from your hands. We didn't have any nuts so they weren't to interested in us. I would 100% recommend doing this so much fun and so cheap. The Lake is great to walk around it's so picturesque.

ACTIVITIES
As part of a New Years Resolution Josh (my other half) and I are looking at ways to cut down our finances and a I came across a great idea on pinterest. A date Jar. This is my one below....
Simply by getting some coloured lolly sticks (I got my'n from the childrens craft section in Tesco) and googling free things to do in my Area which is London. I have then written fun and interesting things for us to do on them. I will keep you posted on our adventures.
